Cheeseburger Meatloaf Muffins


I'm the middle kid that cooks.

this week I cooked cheeseburger meatloaf muffins.

1 pound ground beef
1/2 cup ketchup
1 egg
1 teaspoon worcestershire sauce
1 teaspoon mustard
1/2 cup dry bread crumbs (we use rice
 cereal because we're gluten free)
4 ounces cheddar cheese

preheat oven to 350F.



combine all ingredients, except cheese and mix well.






















spray muffin pans with non stick spray.















fill muffin cup half way with meat mixture.





















place a 1/2 inch cube of cheese on top.


add remaining meat on top, sealing around meat.














place in oven and cook about 40 minutes.  Makes about 8.

Cheesy Noodles

I am the littlest kid that cooks.  This week I made cheesy noodles in the crockpot.  Here is the recipe.  

Cheesy Noodles

1 16oz bag of noodles
1 1/2 cups parmesan cheese
3 eggs
salt to taste




Cook noodles according to package directions.






Break the 3 eggs into a bowl.  Then pour the parmesan cheese into the bowl (I usually don't measure).  Mix well.



Pour cooked noodles into crockpot (you can use an oven proof dish if you want to cook this in the oven).  Then pour the egg mixture into the noodles. Mix Well. Salt to taste.




Cook 1 1/2 to 2 hours on high or 3 to 4 hours on low (in oven at 375 F for about 1 hour).



And here's the finished dish.

Hot Dog Pizzas

I am the oldest kid that cooks and I made the first meal. 







Here's the ingredients:
4 hot dog buns (we used gluten free buns)
1/4 of a ketchup bottle
1 pound of sliced mozzarella
4 hot dogs (sliced)



First my mom turned on the broiler.  Next we cut the hot dog buns in half and toasted them under the broiler. 



When they were done toasting we took them out of the oven and let them cool for 5 min.

We switched the oven to 400*.
Slice the hotdogs into little discs.


Then, put the ketchup on the bun, 



















put the cheese over the K... and put the slices of hot dogs on the buns. Put them in the oven and 
let them cook for 5 or 6 min and then you will have hot dog pizzas.

This meal was not my favorite because I think hot dogs with cheese doesn't mix, but that is only my opinion.

Cooking through the summer

This summer my kids are learning to cook.  They are each cooking one meal a week for the family and we are documenting it here.  The kids each scan cookbooks to find the meal they'd like to make each week.  They will each learn to enter their recipes here, along with pictures of them cooking when available (sometimes mom isn't as good at taking pictures as other times).  They will tell you how they liked it and if they would recommend whatever they cooked.
